What Mississippi Code sections 85-7-419 and 85-7-433 requires

Two forms, printed in section 85-7-433: the interim waiver and release upon payment, and the waiver and release upon final payment.

Both are sworn before a notary public, and both carry a notice whose omission makes the form invalid.

The amount is conclusively deemed paid on the earliest of actual receipt, a separate written acknowledgment, or 60 days after signing unless an affidavit of nonpayment is filed (section 85-7-419(5)).

The interim form releases work through the date you enter and keeps retained amounts.
